Ingredients

  • 2 cups cooked chicken, shredded or finely diced
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream (optional, for extra creaminess)
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions (optional)
  • 4 large (10-inch) flour tortillas
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, combine the softened cream cheese, sour cream (if using), and ranch seasoning mix. Mix until smooth and well combined.
  2. Add the shredded chicken, shredded cheddar cheese, crumbled bacon, and green onions (if using) to the cream cheese mixture. Stir gently until all ingredients are evenly distributed.
  3. Season the mixture with salt and black pepper to taste, adding more ranch seasoning if desired.
  4. Lay one flour tortilla flat on a clean surface. Spread about 1/4 of the chicken mixture evenly over the entire surface of the tortilla, leaving a small border at one edge.
  5. Starting from one side, tightly roll up the tortilla into a log.
  6. Repeat with the remaining tortillas and chicken mixture.
  7. Wrap each rolled tortilla log tightly in plastic wrap and refrigerate for at least 1 hour (or up to 4 hours) to allow the mixture to set and make slicing easier.
  8. Once chilled, unwrap the tortilla logs and use a sharp knife to slice each into 1-inch thick pinwheels.
  9. Arrange the Crack Chicken Pinwheels on a serving platter and serve immediately.
  10. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
