Ingredients

  • 8 oz (226g) cream cheese, softened
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) heavy cream, cold
  • 2 cups fresh strawberries, hulled and sliced or quartered
  • 1 cup fresh blueberries
  • 2 tablespoons granulated sugar (for strawberries, optional)
  • 1/2 cup graham cracker crumbs (optional, for layering)

Instructions

  1. In a large bowl, beat the softened cream cheese with 1/2 cup granulated sugar and vanilla extract until smooth and creamy.
  2. In a separate cold bowl, whip the cold heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until just combined. Be careful not to overmix.
  4. In a small bowl, gently toss the sliced strawberries with 2 tablespoons of sugar (if desired, to bring out their sweetness).
  5. To assemble, you can use individual serving glasses or small bowls. Start with a layer of graham cracker crumbs (if using) at the bottom of each glass.
  6. Spoon a layer of the cheesecake mixture over the crumbs.
  7. Add a layer of sliced strawberries.
  8. Add a layer of blueberries.
  9. Repeat the cheesecake and berry layers, finishing with an artistic arrangement of red and blue berries on top.
  10. Refrigerate for at least 1-2 hours to allow the cheesecake to set and the flavors to meld. Serve chilled and enjoy!
