  • 3-4 ripe medium bananas, mashed (about 1 ½ cups)
  • ½ cup (113g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups (180g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper for easy removal.
  2. In a large mixing bowl, mash the ripe bananas with a fork until they are mostly smooth with a few small lumps remaining.
  3. Add the melted butter, granulated sugar, egg, and vanilla extract to the mashed bananas. Mix well with a whisk or spatula until thoroughly combined.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  6. If you’re using them, gently fold in the chopped walnuts or pecans into the batter.
