This fresh and easy appetizer is ideal for parties, a light snack, or simply to enjoy the vibrant tastes of summer.

Ingredients

  • 1 French baguette or crusty Italian bread, sliced 1/2-inch thick
  • 4-5 ripe Roma tomatoes, diced small
  • 1/4 cup fresh basil leaves, finely chopped
  • 2-3 cloves garlic, minced (plus 1 whole clove for rubbing bread)
  • 3 tablespoons extra virgin olive oil, plus more for brushing bread
  • 1 tablespoon balsamic glaze (optional, for drizzling)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) or prepare a grill for medium heat. If using an oven, arrange bread slices on a baking sheet.
  2. Brush both sides of the bread slices lightly with olive oil. Toast in the oven for 8-10 minutes, flipping halfway, until golden brown and crispy. If grilling, grill for 1-2 minutes per side until lightly charred and crisp. Remove from heat.
  3. While the bread is toasting, prepare the topping. In a medium bowl, combine the diced tomatoes, chopped fresh basil, and minced garlic. Drizzle with 3 tablespoons of extra virgin olive oil.
  4. Season the tomato mixture generously with salt and freshly ground black pepper. Stir gently to combine all ingredients. Let it sit for at least 5-10 minutes to allow the flavors to meld.
  5. Once the toasted bread is slightly cooled, take the remaining whole garlic clove and gently rub the cut side over one side of each bread slice. This imparts a subtle garlic flavor to the bread.
  6. Spoon a generous amount of the tomato mixture onto each slice of garlic-rubbed toast.
  7. Arrange the bruschetta on a serving platter. If desired, drizzle lightly with balsamic glaze before serving.
  8. Serve immediately and enjoy this delightful fresh appetizer!
