Ingredients
- 1 French baguette or crusty Italian bread, sliced 1/2-inch thick
- 4-5 ripe Roma tomatoes, diced small
- 1/4 cup fresh basil leaves, finely chopped
- 2-3 cloves garlic, minced (plus 1 whole clove for rubbing bread)
- 3 tablespoons extra virgin olive oil, plus more for brushing bread
- 1 tablespoon balsamic glaze (optional, for drizzling)
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) or prepare a grill for medium heat. If using an oven, arrange bread slices on a baking sheet.
- Brush both sides of the bread slices lightly with olive oil. Toast in the oven for 8-10 minutes, flipping halfway, until golden brown and crispy. If grilling, grill for 1-2 minutes per side until lightly charred and crisp. Remove from heat.
- While the bread is toasting, prepare the topping. In a medium bowl, combine the diced tomatoes, chopped fresh basil, and minced garlic. Drizzle with 3 tablespoons of extra virgin olive oil.
- Season the tomato mixture generously with salt and freshly ground black pepper. Stir gently to combine all ingredients. Let it sit for at least 5-10 minutes to allow the flavors to meld.
- Once the toasted bread is slightly cooled, take the remaining whole garlic clove and gently rub the cut side over one side of each bread slice. This imparts a subtle garlic flavor to the bread.
- Spoon a generous amount of the tomato mixture onto each slice of garlic-rubbed toast.
- Arrange the bruschetta on a serving platter. If desired, drizzle lightly with balsamic glaze before serving.
- Serve immediately and enjoy this delightful fresh appetizer!
