Ingredients
- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder (preferably Dutch-processed)
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon fine salt (for the dough)
- 1 cup semi-sweet chocolate chips or chunks
- 1-2 teaspoons flaky sea salt, for sprinkling
Instructions
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and well combined.
- Beat in the eggs one at a time, then stir in the vanilla extract until the mixture is lightened and fluffy.
- In a separate medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and fine salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in the chocolate chips or chunks until evenly distributed throughout the dough.
- Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes, or up to 2 hours. This helps prevent the cookies from spreading too much.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Bake for 9-11 minutes, or until the edges are set but the centers still look slightly soft and gooey. Do not overbake!
- Immediately after removing from the oven, lightly sprinkle each warm cookie with flaky sea salt.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy!
