Ingredients
- 1 lb ground beef or turkey (or 1 can black beans, rinsed and drained, for vegetarian option)
- 1 packet (1 oz) taco seasoning
- 1/2 cup water
- 6 oz tortilla chips
- 1.5 cups shredded Colby Jack or Mexican blend cheese
- 1/2 cup salsa
- 1/4 cup sour cream or Greek yogurt
- 2 tbsp sliced pickled jalapeños (optional)
- 1/4 cup chopped fresh cilantro (optional)
- 1/2 avocado, diced (optional)
Instructions
- In a large skillet, brown the ground beef (or turkey) over medium heat, breaking it up with a spoon. Drain any excess fat.
- Stir in the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until most of the liquid has evaporated and the meat is well-coated.
- Preheat your oven to 375°F (190°C) or prepare a microwave-safe plate/bowl.
- On an oven-safe baking sheet or large microwave-safe plate, spread half of the tortilla chips in an even layer.
- Sprinkle half of the seasoned meat (or black beans) over the chips, followed by half of the shredded cheese.
- Repeat with the remaining chips, meat/beans, and cheese, creating another layer.
- Bake in the preheated oven for 8-12 minutes, or until the cheese is melted and bubbly. (Alternatively, microwave on high for 1-2 minutes until cheese is melted).
- Carefully remove from the oven or microwave. Drizzle with salsa and sour cream.
- Garnish with sliced jalapeños, fresh cilantro, and diced avocado, if desired.
