Ingredients

  • 1 lb ground beef or turkey (or 1 can black beans, rinsed and drained, for vegetarian option)
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 6 oz tortilla chips
  • 1.5 cups shredded Colby Jack or Mexican blend cheese
  • 1/2 cup salsa
  • 1/4 cup sour cream or Greek yogurt
  • 2 tbsp sliced pickled jalapeños (optional)
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/2 avocado, diced (optional)

Instructions

  1. In a large skillet, brown the ground beef (or turkey) over medium heat, breaking it up with a spoon. Drain any excess fat.
  2. Stir in the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until most of the liquid has evaporated and the meat is well-coated.
  3. Preheat your oven to 375°F (190°C) or prepare a microwave-safe plate/bowl.
  4. On an oven-safe baking sheet or large microwave-safe plate, spread half of the tortilla chips in an even layer.
  5. Sprinkle half of the seasoned meat (or black beans) over the chips, followed by half of the shredded cheese.
  6. Repeat with the remaining chips, meat/beans, and cheese, creating another layer.
  7. Bake in the preheated oven for 8-12 minutes, or until the cheese is melted and bubbly. (Alternatively, microwave on high for 1-2 minutes until cheese is melted).
  8. Carefully remove from the oven or microwave. Drizzle with salsa and sour cream.
  9. Garnish with sliced jalapeños, fresh cilantro, and diced avocado, if desired.
  10. Serve immediately and enjoy your perfectly ‘Loaded’ dish!
