Ingredients

  • 1/2 cup (113g) unsalted butter, melted
  • 1/2 cup (100g) granulated sugar
  • 3/4 cup (150g) packed light brown sugar
  • 1 large egg
  • 1 large egg yolk (reserve the white for another use)
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (210g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (255g) semi-sweet chocolate chips or chunks

Instructions

  1. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and well combined.
  2. Whisk in the egg, egg yolk, and vanilla extract until the mixture is light and creamy, about 1 minute.
  3. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Be careful not to overmix.
  5. Fold in the chocolate chips until evenly distributed throughout the dough.
  6. Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes, or up to 2 hours. Chilling helps prevent spreading and enhances chewiness.
  7. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
  8. Scoop rounded tablespoons of dough (about 1.5-2 tablespoons each) onto the prepared baking sheets, leaving about 2 inches between each cookie.
  9. Bake for 9-12 minutes, or until the edges are golden brown and crispy, but the centers still look slightly soft and puffed. For extra chewiness, underbake slightly.
  10. Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely. This helps them set and develop that perfect crispy edge.
