Ingredients
- 1 tbsp coconut oil or olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp red curry paste (or more, to taste)
- 1 (13.5 oz) can full-fat coconut milk
- 1.5 cups vegetable broth
- 2 medium sweet potatoes, peeled and diced into 1-inch cubes
- 1 (15 oz) can chickpeas, rinsed and drained
- 2 cups baby spinach
- 1 tbsp lime juice
- Salt to taste
- Fresh cilantro, chopped (for garnish)
- Cooked rice or naan (for serving)
Instructions
- Heat coconut oil in a large pot or Dutch oven over medium heat.
- Add chopped onion and cook until softened, about 5-7 minutes.
- Stir in minced garlic and grated ginger, cooking for another minute until fragrant.
- Add red curry paste and cook for 1-2 minutes, stirring constantly, to toast the spices.
- Pour in the coconut milk and vegetable broth, stirring well to combine.
- Add the diced sweet potatoes to the pot. Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until sweet potatoes are tender.
- Stir in the rinsed chickpeas and baby spinach. Cook for another 2-3 minutes, until the spinach has wilted.
- Remove from heat, stir in lime juice, and season with salt to taste.
