Ingredients

  • 1 lb baby bok choy (about 2-3 heads)
  • 2 cloves garlic, minced
  • 1 tablespoon neutral cooking oil (like vegetable or canola)
  • 3 tablespoons oyster sauce
  • 1 tablespoon water or chicken broth
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper (optional)
  • 1/2 teaspoon sesame oil (optional, for finishing)

Instructions

  1. Thoroughly wash the bok choy. Trim off the very bottom of the stems. If using larger heads, cut them in half lengthwise. If using baby bok choy, you can leave them whole or cut them in half if preferred.
  2. In a small bowl, whisk together the oyster sauce, water (or chicken broth), sugar, and white pepper (if using). Set aside.
  3. Heat the neutral cooking oil in a large skillet or wok over medium-high heat. Add the minced garlic and stir-fry for about 15-30 seconds until fragrant, being careful not to burn it.
  4. Add the prepared bok choy to the skillet. Stir-fry for 2-3 minutes, tossing frequently, until the bok choy starts to wilt and turn bright green.
  5. Pour the prepared sauce mixture over the bok choy. Continue to stir-fry for another 1-2 minutes, tossing to coat the bok choy evenly with the sauce, until the bok choy is tender-crisp.
  6. Remove from heat, drizzle with sesame oil (if using), and serve immediately as a delicious side dish.
