Refreshing Watermelon Cake Recipe – Easy Summer Dessert

Beat the summer heat with a dessert that’s as refreshing as it is beautiful! This Watermelon Cake is not your average baked good; it’s a vibrant, naturally sweet, and incredibly light treat perfect for any warm-weather gathering. Forget heavy sponges and rich buttercreams – this easy recipe lets the fresh fruit shine.

Ingredients

  • 1 large, seedless watermelon
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar (or to taste)
  • 1 tsp vanilla extract
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • Fresh mint leaves, for garnish
  • Optional: 1/4 cup chopped pistachios or almonds for garnish

Instructions

  1. Prepare the Watermelon Base: Carefully slice the watermelon into a large, thick disc (about 3-4 inches thick) to form your cake base. Use a sharp knife to trim the rind away, shaping the watermelon into a cylinder (like a round cake). Pat the entire surface of the watermelon very dry with paper towels to help the frosting adhere. You might need to do this a few times.
  2. Make the Whipped Cream: In a large, chilled bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric mixer on high speed until stiff peaks form. Be careful not to overbeat, or it will turn into butter.
  3. Frost the “Cake”: Generously spread the whipped cream over the top and sides of the dried watermelon base, just as you would frost a traditional cake.
  4. Decorate: Arrange the fresh mixed berries artfully over the top of the “cake.” Sprinkle with chopped pistachios or almonds if using. Garnish with fresh mint leaves.
  5. Chill and Serve: Place the finished watermelon cake in the refrigerator for at least 30 minutes to chill and allow the whipped cream to set slightly. Serve immediately after chilling for the best texture and freshness. Enjoy your refreshing summer treat!
