- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 4 cups vegetable broth (or chicken broth)
- 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
- 1/4 cup grated Parmesan cheese (optional)
- Salt and freshly ground black pepper to taste
- 2 tablespoons fresh parsley, chopped, for garnish
Instructions
- Melt olive oil and unsalted butter in a large pot or Dutch oven over medium heat.
- Add the finely diced onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes.
- Stir in the minced garlic, dried thyme, and smoked paprika. Cook for another minute until fragrant, being careful not to burn the garlic.
