- 2 tablespoons olive oil
- 1 pound zucchini, halved lengthwise and sliced into 1/2-inch pieces
- 8 ounces cremini (baby bella) mushrooms, wiped clean and quartered
- 1/2 small yellow onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt, or to taste
- 2 tablespoons fresh parsley, chopped (for garnish, optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the sliced zucchini and quartered mushrooms to the hot skillet in a single layer if possible. Cook for 5-7 minutes, stirring occasionally, until the vegetables start to brown and soften.
- Add the chopped yellow onion to the skillet. Continue to cook for another 3-4 minutes, stirring, until the onion becomes translucent.
- Stir in the minced garlic, dried thyme, salt, and black pepper. Cook for an additional 1-2 minutes, stirring constantly, until the garlic is fragrant and the spices are well distributed.
- Taste and adjust seasoning if necessary. Remove the skillet from heat.
