- 1 teaspoon vanilla extract
- 1 cup (240ml) heavy cream, cold
- 2 cups fresh strawberries, hulled and sliced or quartered
- 1 cup fresh blueberries
- 2 tablespoons granulated sugar (for strawberries, optional)
- 1/2 cup graham cracker crumbs (optional, for layering)
Instructions
- In a large bowl, beat the softened cream cheese with 1/2 cup granulated sugar and vanilla extract until smooth and creamy.

- Gently fold the whipped cream into the cream cheese mixture until just combined. Be careful not to overmix.
- In a small bowl, gently toss the sliced strawberries with 2 tablespoons of sugar (if desired, to bring out their sweetness).

- Spoon a layer of the cheesecake mixture over the crumbs.
- Add a layer of sliced strawberries.
- Add a layer of blueberries.
- Repeat the cheesecake and berry layers, finishing with an artistic arrangement of red and blue berries on top.
- Refrigerate for at least 1-2 hours to allow the cheesecake to set and the flavors to meld. Serve chilled and enjoy!
