Frozen Lemon Shell Sorbetto – Refreshing Italian Treat

Experience a taste of the Italian coast with our Frozen Lemon Shell Sorbetto! This delightful recipe takes classic limone sorbetto to an elegant new level, serving it chilled inside its own vibrant lemon rind. Perfect for a refreshing dessert or a chic palate cleanser, it’s surprisingly simple to create.

Ingredients

  • 6-8 large, firm lemons (choose ones with good shape for serving)
  • 1 cup granulated sugar
  • 1 cup water
  • Pinch of salt (optional, to enhance flavor)
  • 2 tablespoons fresh lemon zest (optional, for extra lemon punch)
  • 2 tablespoons Limoncello (optional, for an adult version)
  • Fresh mint sprigs for garnish (optional)

Instructions

  1. Wash the lemons thoroughly. Cut each lemon in half lengthwise or crosswise (your preference for presentation). Using a small spoon or grapefruit spoon, carefully scoop out all the pulp and membranes from each lemon half, being careful not to pierce the skin. Reserve the pulp for juice.
  2. Juice the reserved lemon pulp. You should aim for approximately 1 to 1.5 cups of fresh lemon juice. Strain the juice through a fine-mesh sieve to remove any seeds or excessive pulp.
  3. In a medium saucepan, combine the granulated sugar and water. Heat over medium heat, stirring constantly, until the sugar completely dissolves and the mixture is clear. Remove from heat and let cool completely. Add the pinch of salt at this stage if using.
  4. Once the simple syrup is completely cool, combine it with the strained fresh lemon juice. Stir well. If using lemon zest or Limoncello, add them now.
  5. Pour the mixture into your ice cream maker bowl and churn according to the manufacturer’s instructions, typically for 20-30 minutes, until it reaches a soft-serve consistency.
  6. If you don’t have an ice cream maker, pour the mixture into a shallow freezer-safe dish. Freeze for 1-2 hours, then remove and vigorously stir or whisk to break up ice crystals. Repeat this process every 30-60 minutes for 3-4 hours, or until the sorbetto is firm but still scoopable.
  7. Once the sorbetto has reached a firm, scoopable consistency, carefully spoon or scoop it into the hollowed-out lemon shells. Arrange the filled shells on a baking sheet.
  8. Place the baking sheet with the filled lemon shells back into the freezer for at least 2-3 hours, or until the sorbetto is completely firm. Before serving, you can let them sit at room temperature for a few minutes to soften slightly. Garnish with fresh mint sprigs if desired.
