Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups grated zucchini (about 2 medium zucchini), squeezed of excess moisture
  • 1 cup chopped walnuts or pecans (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease and flour two 8×4 inch loaf pans or one 9×13 inch pan.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
  3. In a separate large bowl, combine the granulated sugar and vegetable oil. Whisk until well combined.
