  • 1 large egg, room temperature

  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy.
  4. Beat in the egg until well combined, then stir in the vanilla extract.
  5. Add the mashed bananas and buttermilk (or milk mixture) to the wet ingredients and mix until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Be careful not to overmix; a few lumps are okay.
