Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe medium bananas, mashed (about 1 1/4 cups)
  • 1/2 cup sour cream or plain Greek yogurt
  • 1 cup semi-sweet chocolate chips, plus more for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Add the mashed bananas and sour cream (or Greek yogurt) to the wet ingredients and mix until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix; a few lumps are okay.
  7. Gently fold in 1 cup of the semi-sweet chocolate chips.
  8. Pour the batter into the prepared loaf pan. If desired, sprinkle a few extra chocolate chips on top.
  9. Bake for 50-65 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs, but no wet batter. If the top browns too quickly, tent loosely with foil.
  10. Let the banana bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
