Pistachio Raspberry Cake Recipe-Delicious & Easy Treat

Ingredients

  • FOR THE PISTACHIO CAKE LAYERS:
  • 1 ½ cups (180g) all-purpose flour
  • 1 cup (100g) finely ground unsalted pistachios (blanched and shelled)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 3 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) buttermilk, at room temperature
  • FOR THE RASPBERRY FILLING:
  • 1 ½ cups (200g) fresh or frozen raspberries
  • ¼ cup (50g) granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • FOR THE PISTACHIO BUTTERCREAM:
  • 1 cup (226g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • ½ cup (50g) finely ground unsalted pistachios
  • 3-5 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • FOR GARNISH (OPTIONAL):
  • Fresh raspberries
  • Chopped pistachios

Instructions

  1. 1. Preheat Oven & Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, or line with parchment paper circles.
  2. 2. Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, ground pistachios, baking powder, and salt. Set aside.
  3. 3. Cream Butter & Sugar: In a large bowl, using an electric mixer, cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  4. 4. Add Eggs & Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. 5. Alternate Dry & Wet: Gradually add the dry ingredient mixture to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  6. 6. Bake Cake Layers: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  7. 7. Prepare Raspberry Filling: While the cakes cool, combine raspberries, granulated sugar, and lemon juice in a small saucepan over medium heat. Bring to a simmer, stirring occasionally, until the raspberries break down (about 5-7 minutes). Stir in the cornstarch slurry and cook for another 1-2 minutes until thickened. Remove from heat and let cool completely. The filling will thicken further as it cools.
  8. 8. Make Pistachio Buttercream: In a large bowl, beat the softened butter with an electric mixer until creamy. Gradually add the sifted powdered sugar, ground pistachios, vanilla extract, and a pinch of salt. Beat until smooth. Add heavy cream or milk, 1 tablespoon at a time, until the buttercream reaches your desired consistency for spreading and piping.
  9. 9. Assemble the Cake: Once the cake layers are completely cool, place one layer on your serving plate. Spread an even layer of raspberry filling over the top, leaving a small border around the edge. Cover the raspberry filling with a layer of pistachio buttercream.
  10. 10. Stack & Frost: Carefully place the second cake layer on top. Frost the top and sides of the entire cake with the remaining pistachio buttercream. Use an offset spatula or bench scraper to smooth the frosting.
