Spicy Red Lentil Curry – Easy Flavorful Meal

Ingredients
- 1 tablespoon olive oil or coconut oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 inch fresh ginger, grated
- 1-2 fresh green chilies (like serrano or jalapeño), deseeded and minced (optional, for extra heat)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 – 1 teaspoon cayenne pepper or red chili powder (adjust to desired spice level)
- 1/2 teaspoon garam masala
- 1 cup red lentils, rinsed
- 1 (14.5 ounce) can diced tomatoes, undrained
- 3 cups vegetable broth (or water)
- 1 (13.5 ounce) can full-fat coconut milk
- 1/2 teaspoon salt, or to taste
- Fresh cilantro, chopped, for garnish
- Cooked rice or naan, for serving
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes.
- Add the minced garlic, grated ginger, and optional minced green chilies to the pot. Cook for another 1-2 minutes until fragrant, being careful not to burn the garlic.
- Stir in the ground cumin, ground coriander, ground turmeric, cayenne pepper (or red chili powder), and garam masala. Cook for 30 seconds to 1 minute, stirring constantly, until the spices are fragrant.
- Add the rinsed red lentils, diced tomatoes (with their juice), and vegetable broth to the pot. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the lentils are tender and have absorbed most of the liquid. Stir occasionally to prevent sticking.
- Stir in the full-fat coconut milk and salt. Continue to simmer gently, uncovered, for another 5 minutes, allowing the curry to thicken slightly and the flavors to meld.
- Taste and adjust seasoning if necessary. If you prefer a thinner curry, add a little more broth or water.
