Ingredients
- 1/2 cup (113g) unsalted butter, melted
- 1/2 cup (100g) granulated sugar
- 3/4 cup (150g) packed light brown sugar
- 1 large egg
- 1 large egg yolk (reserve the white for another use)
- 1 teaspoon vanilla extract
- 1 3/4 cups (210g) all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups (255g) semi-sweet chocolate chips or chunks
Instructions
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and well combined.
- Whisk in the egg, egg yolk, and vanilla extract until the mixture is light and creamy, about 1 minute.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Be careful not to overmix.
- Fold in the chocolate chips until evenly distributed throughout the dough.
- Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes, or up to 2 hours. Chilling helps prevent spreading and enhances chewiness.
- Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
- Scoop rounded tablespoons of dough (about 1.5-2 tablespoons each) onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Bake for 9-12 minutes, or until the edges are golden brown and crispy, but the centers still look slightly soft and puffed. For extra chewiness, underbake slightly.
- Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely. This helps them set and develop that perfect crispy edge.
