Ingredients
- For the Crust:
- 1 ½ cups graham cracker crumbs (about 10-12 full sheets)
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
- For the Cheesecake Filling:
- 3 (8-ounce) packages cream cheese, softened
- 1 ½ cups granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- ½ cup sour cream
- 2 tablespoons all-purpose flour
- Pinch of salt
- For the Strawberry Topping:
- 2 cups fresh strawberries, hulled and sliced
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch dissolved in 2 tablespoons cold water (slurry)
Instructions
- Prepare the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, ¼ cup sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove from oven and let cool. Reduce oven temperature to 325°F (160°C).
- Prepare the Filling: In a large bowl, beat softened cream cheese with 1 ½ cups sugar and vanilla extract until smooth and creamy, about 3-5 minutes.
- Add eggs one at a time, beating well after each addition, until just combined. Do not overmix.
- Stir in sour cream, flour, and a pinch of salt until just incorporated.
- Bake the Cheesecake: Pour the cheesecake filling over the cooled crust in the springform pan.
- Place the springform pan in a larger roasting pan. Pour about 1 inch of hot water into the roasting pan to create a water bath (bain-marie). This helps prevent cracks.
- Bake for 60-75 minutes, or until the edges are set but the center still jiggles slightly when gently shaken.
- Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. This slow cooling also helps prevent cracking.
- Remove from the oven and water bath. Let cool completely on a wire rack, then cover and refrigerate for at least 4 hours, or preferably overnight, before adding the topping.
- Prepare the Strawberry Topping: In a medium saucepan, combine sliced strawberries, ¼ cup sugar, and lemon juice. Cook over medium heat, stirring occasionally, until strawberries begin to soften and release their juices, about 5-7 minutes.
- Add the cornstarch slurry and stir constantly until the sauce thickens to your desired consistency. Remove from heat and let cool completely.
- Assemble and Serve: Once the cheesecake is chilled and the topping is cooled, carefully remove the cheesecake from the springform pan. Pour the strawberry topping evenly over the chilled cheesecake.
- Slice and serve your delicious Strawberry Cheesecake!
