Ingredients

  • 3 cups cooked day-old white rice (chilled is best)
  • 2 large eggs
  • 2 tbsp vegetable oil (or any neutral oil)
  • 1/2 cup frozen peas and carrots blend
  • 1/4 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce (or more to taste)
  • 1 tsp sesame oil
  • 1/4 tsp white pepper (optional)
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a small bowl, lightly beat the two eggs with a pinch of salt and pepper. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large wok or a large non-stick skillet over medium-high heat. Add the beaten eggs and scramble until just cooked through but still soft. Remove the scrambled eggs from the wok and set aside.
  3. Add the remaining 1 tablespoon of vegetable oil to the wok. Add the chopped yellow onion and cook for 1-2 minutes until softened.
  4. Add the minced garlic and the frozen peas and carrots blend. Stir-fry for 2-3 minutes until vegetables are tender-crisp.
  5. Add the cold day-old rice to the wok. Break up any clumps with your spatula and stir-fry for 3-4 minutes, pressing the rice against the pan to heat it thoroughly and develop a slight crispness.
  6. Pour the soy sauce, sesame oil, and white pepper (if using) over the rice. Stir well to ensure the rice is evenly coated and seasoned.
  7. Return the scrambled eggs to the wok. Toss gently to combine all ingredients.
  8. Cook for another 1-2 minutes, stirring constantly, until everything is heated through and well mixed.
  9. Remove from heat, garnish with chopped green onions, and serve immediately. Enjoy your quick and delicious Egg Fried Rice!
