Ingredients
- 3 cups cooked day-old white rice (chilled is best)
- 2 large eggs
- 2 tbsp vegetable oil (or any neutral oil)
- 1/2 cup frozen peas and carrots blend
- 1/4 cup chopped yellow onion
- 2 cloves garlic, minced
- 2 tbsp soy sauce (or more to taste)
- 1 tsp sesame oil
- 1/4 tsp white pepper (optional)
- 2 green onions, chopped (for garnish)
Instructions
- In a small bowl, lightly beat the two eggs with a pinch of salt and pepper. Set aside.
- Heat 1 tablespoon of vegetable oil in a large wok or a large non-stick skillet over medium-high heat. Add the beaten eggs and scramble until just cooked through but still soft. Remove the scrambled eggs from the wok and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the wok. Add the chopped yellow onion and cook for 1-2 minutes until softened.
- Add the minced garlic and the frozen peas and carrots blend. Stir-fry for 2-3 minutes until vegetables are tender-crisp.
- Add the cold day-old rice to the wok. Break up any clumps with your spatula and stir-fry for 3-4 minutes, pressing the rice against the pan to heat it thoroughly and develop a slight crispness.
- Pour the soy sauce, sesame oil, and white pepper (if using) over the rice. Stir well to ensure the rice is evenly coated and seasoned.
- Return the scrambled eggs to the wok. Toss gently to combine all ingredients.
- Cook for another 1-2 minutes, stirring constantly, until everything is heated through and well mixed.
