Ingredients

  • For the Cake:
  • 2 cups rolled oats (gluten-free if preferred)
  • 1/2 cup unsweetened applesauce (or 1/4 cup neutral oil like avocado or vegetable)
  • 1/2 cup maple syrup or honey
  • 2 large eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1.5 cups finely grated carrots (about 2-3 medium carrots)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Pinch of salt
  • 1/2 cup chopped walnuts or raisins (optional)
  • For the Light Cream Cheese Frosting (Optional, for a healthier twist):
  • 4 oz light cream cheese, softened
  • 1/4 cup plain Greek yogurt (full-fat recommended for best texture)
  • 2 tablespoons maple syrup or powdered erythritol
  • 1/2 teaspoon vanilla extract

Instructions

  1. 1. Preheat your oven to 350°F (175°C). Grease and lightly ‘flour’ (with oat flour or cocoa powder) an 8×8 inch square baking pan or a 9-inch round cake pan.
  2. 2. In a food processor or blender, blend the rolled oats until they resemble a fine flour. Set aside.
  3. 3. In a large bowl, whisk together the applesauce (or oil), maple syrup, eggs, milk, and vanilla extract until well combined.
  4. 4. In a separate medium bowl, combine the oat flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  5. 5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. 6. Gently fold in the grated carrots and any optional walnuts or raisins.
  7. 7. Pour the batter into the prepared baking pan and spread evenly.
  8. 8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. 9. Let the cake cool completely in the pan on a wire rack before frosting.
  10. 10. To make the light cream cheese frosting (if desired): In a medium bowl, beat the softened light cream cheese, Greek yogurt, maple syrup (or erythritol), and vanilla extract until smooth and creamy.
  11. 11. Once the cake is fully cooled, spread the frosting evenly over the top. Slice and serve.
