Easy Vegan Mango Mousse – Luscious Tropical Dessert
Craving a light, fruity, and utterly delightful dessert that’s completely plant-based? This Easy Vegan Mango Mousse is your answer! Whipped to perfection with ripe, sweet mangoes and creamy coconut, it’s a tropical escape in every spoonful, surprisingly simple to make.
Ingredients
- 2 large ripe mangoes (approx. 2 cups mango pulp)
- 1 can (13.5 oz / 400ml) full-fat coconut milk or cream, chilled overnight
- 2-4 tablespoons maple syrup or agave nectar (adjust to taste)
- 1 tablespoon fresh lime juice
- 1 teaspoon vanilla extract (optional)
- Pinch of salt
Instructions
- Chill Coconut Cream: Place the can of full-fat coconut milk or cream in the refrigerator overnight (or at least 8 hours). This allows the solid cream to separate from the liquid.
- Prepare Mangoes: Peel the ripe mangoes and cut the flesh away from the pit. Place the mango chunks into a food processor or high-speed blender.
- Blend Mango Puree: Process the mango until it’s completely smooth and no lumps remain. You should have about 2 cups of smooth mango puree. Set aside.
- Whip Coconut Cream: Carefully open the chilled can of coconut cream. Scoop out only the thick, solid coconut cream from the top, leaving the watery liquid behind (you can save the liquid for smoothies!). Place the solid cream into a large mixing bowl.
- Add Flavorings: Add the maple syrup (start with 2 tbsp and add more if needed after tasting), fresh lime juice, vanilla extract (if using), and a pinch of salt to the coconut cream.
- Whip Mousse Base: Using an electric mixer (handheld or stand mixer with a whisk attachment), whip the coconut cream mixture on high speed for 3-5 minutes, until it becomes light, fluffy, and holds soft peaks, similar to whipped cream. Be careful not to over-whip.
- Combine: Gently fold the smooth mango puree into the whipped coconut cream using a spatula. Mix until just combined, being careful not to deflate the mousse.
- Chill & Serve: Spoon the mango mousse into individual serving glasses or a large dessert bowl. Cover and refrigerate for at least 2-4 hours to allow it to set and chill thoroughly. Garnish with extra mango pieces, lime zest, or fresh mint before serving, if desired.
