- 1 clove garlic, minced
- 1/2 teaspoon sesame oil

- 1 lb boneless, skinless chicken breasts, thinly sliced or cut into bite-sized pieces
- Salt and black pepper to taste
- 1 head butter lettuce or romaine lettuce, leaves separated
- 1 cup shredded carrots
- 1/2 cup thinly sliced cucumber
- 1/2 red bell pepper, thinly sliced

Instructions
- **Prepare the Peanut Sauce:** In a small bowl, whisk together the peanut butter, warm water, soy sauce, lime juice, honey (or maple syrup), grated ginger, minced garlic, sesame oil, and red pepper flakes (if using).
